These cookies are made with sprouted wheat flour, a unique method developed by our friends at Lindley Mills where the wheat is first sprouted, then dried and finally ground into flour. Nutritionally, your body treats this more like a vegetable than a starch. The eggs come from a local, family-owned ranch (not a corporate farm) where all chickens are raised without cages and are never fed animal by-products, hormones or other drugs to enhance egg production. The butter comes from a family farm run by the sixth generation of dairy farmers. The Girls (as they refer to the milk-producing herd) dine on grass, grains grown right on the farm and are never fed hormones, stimulants, or other artificial chemicals to enhance milk production. They are treated with care and respect, as it should be.
